This coffee comes from Carlos Henrique, and daughter Dani Alkmin, who together manage operations of Santa Rita de Cássia Farm. Carlos and a friend bought the farm as partners back in 1982, and has since expanded slowly through the years. Carlos oversees farm production and upkeep, while Dani handles more of the business end of things these days. The farmland is just under 150 hectares, with 78 planted in coffee. By law, farmers have to retain 20% of your land as natural forest. They call this, "Mata", which roughly translates to "original land". The farm is planted in varieties Mundo Novo, Acaia, Catuai, Catucai, and Arara. The latter is a Sarchimor variety that's gained popularity with Brazilian farmers in recent years due to its high yield, disease resistance, and cup quality. Their farm is situated on the sloping hills of the Serra da Mantiqueira in Carmo de Minas, and spans a pretty steep incline of 900 to 1250 meters above sea level. In addition to the standard dry process and pulp natural coffees, they also produce a small amount of honey process too.
